Dutch Oven Dinner Recipes:  Chili Frito Pie

This dish is an easy crowd pleaser that can be dressed up to match the tastes and desires of your particular audience. If you like it hot and spicy, add some Jalapenos. Add Salsa or many of a number of variations.

The recipe below is designed to feed a group of 8-10 people.
 


INGREDIENTS:
1 pound of ground beef.
4 eight inch corn tortillas.
4 cups Fritos corn chips
1/4 cup chopped or minced onion
2 cup grated cheddar cheese
4 cups chili (your favorite -- homemade, canned, whatever)

MATERIALS:
12 inch Dutch oven

INSTRUCTIONS:
Brown the ground beef in the Dutch oven, drain the fat and put aside the browned beef.
Spread the tortillas on the bottom of the Dutch oven.
Spread 2 cups of Fritos evenly on the bottom of the Dutch oven.
Sprinkle half the onion and half the cheese over the Fritos.
Sprinkle half the browned ground beef over this.
Pour the chili over the beef, onion and cheese.
Sprinkle the remaining ground beef, then the Fritos, and finally the onion and cheese over the chili.

Place the Dutch oven on top of 8-10 charcoal, with 6-8 on top of the oven as well.
Bake for 15 or 20 minutes until the cheese is bubbly. Serve hot.

VARIATION:
Add sliced Jalapeno to the top of the mixture.
Add sliced ripe black olives on top.
Serve with salsa
