Dutch Oven Dinner Recipes:  Hawaiian Chicken

Needed: Dutch oven, 1 can pineapple slices or chunks, 1 bottle barbeque sauce (any, I use Kraft Original), chicken breasts (with or without bones) one per Scout + one for Scoutmaster.

Prepare coals for Dutch oven. Open can of pineapple, pour juice into a cup. Put rest into Dutch oven and spread into single layer. Pour enough of juice over pineapple to come up about half way on the chunks. (If any juice is left over in cup, drink it - cook's privilege.) Place chicken on pineapple pieces. Pour bottle of barbecue sauce uniformly over chicken. Cover and place on hot coals. Cook for one hour (some fires are hotter than others, I have left the chicken on the fire for an hour and a half and it was fine.)

Serve chicken and some of the pineapple to each Scout and invite the Scoutmaster to partake.

Reference information: The pineapple goes on the bottom so the chicken won't burn. The juice generates steam to help the chicken cook up moist.
